I recently purchased some gorgeous and large scallops at Schaefers and am going to prepare them this weekend. I have several recipes I use but am always wanting to experiment.
Anybody here have a favorite recipe that I can try or something unusual?

I eat fish and shrimp and that it is it. I heard using Tempura is a good coating.
Shrimp, I put in coconut milk over night in the fridge. Then I roll them lightly in cornmeal and crushed crackers and sautee them in real butter until golden brown. Serve with noodles or rice and a side salad and it becomes a light tasty meal that is good for you.

My husband got food poisoning from eating scallops when he was in the army. He ended up in the hospital with a bunch of other soldiers. When I asked him if he liked them, he got feeling sick. I ate them once and liked them. They didn't have a coating on them but they were browned in butter and served that way. I don't remember what else came with them. I would just as soon leave fish in the sea and eat fruits and veggies instead. Speaking of veggies, the sweet corn this year is the best ever. I was wondering if it would be good because the weather is really cold lately and I think corn likes hot and humid weather. I hope you Minnesota people get to have some good corn this year. I ate so much today that my stomach feels like it is full of lead.
